What is Ibaan tamales, of Ibaan, Batangas?
Ibaan tamales is different from tamales suman that most Filipinos know. It is different in its ingredients because unlike the tamales suman, which is made with sticky rice with coconut milk and sugar, Ibaan tamales is made with rice flour stuffed with meat, chicken, eggs, and peanuts. The orange color of the filling is due to atsuete.

You can find this delicacy in Ibaan market. It is famous there. Ibaan is a town that is just 30 minutes away from Lipa, Batangas. It is famous because it has its distinct flavor. For me, it is more palatable if it’s spicy. In my experience, whenever we have this food at home, we always have a second helping.
